This dinner is a love letter: to Oaxaca, to friendship, to food that tells a story.
Join us for an evening inspired by the colors, flavors and spirit of Oaxaca, Mexico — one of the world’s great culinary capitals. Together with our friends from Zingerman’s Food Tours, we’ll bring to life the memories and tastes from our shared journeys there — from the smoke of the comal to the earthy depth of mole negro and the brightness of mezcal.
Each course will celebrate the ingredients and traditions that define Oaxacan cooking, while honoring the people who make it unforgettable. Between bites and stories, we’ll share why this place captured our hearts — and how it continues to inspire the way we cook, gather, and travel.

Oaxacan Green Chorizo
One of Kieron’s greatest finds from his trip. A pork sausage with peanuts, almonds, hazelnuts and walnuts with a touch of heat and chilli
Frijoles de la Olla
Clay pot beans simmered with epazote
Roasted Squash with Hoja Santa Butter VEG
Local squash wedges roasted until caramelised, brushed with hoja santa and farm butter
Hand-pressed Corn Tortillas VEGAN GF
DESSERT
Oaxacan Hot Chocolate & Buñuelos
Cinnamon-spiced hot chocolate, whisked frothy, served with crisp fritters dusted in sugar.
